Growing over the years on your site eggplant, we have always, as a rule, preferred the traditional dark purple varieties. It is no coincidence that the people called them "blue". Recently, seeds of varieties with white, yellow, green color, variegated have appeared on sale.
The fruits of white-fruited varieties are good because they retain a delicate taste, they are practically without bitterness up to biological ripeness, even in very hot, dry years. And they give a good harvest. Previously, such varieties were considered exotic and more decorative than vegetable, because there were so few of them. Now there is a choice and it is pretty good. And we use it. Here are some of those that have been tested on our site. They have white fruits.
In the Lebedinny variety, the fruits ripen in 100-130 days, they are elongated pear-shaped, weighing 150-300 grams, and are very well stored. Bushes 100-110 cm high with medium-sized leaves.
More massive (250-270 g) elongated (up to 20 cm) eggplant fruits with a very delicate, shiny skin in the Snizhny variety. They ripen in 100-105 days under a film. in the greenhouse or in a tunnel, the yield is 5-6 kg / m2. The plant of this variety is indeterminate, 90-100 cm high, with medium-sized light green leaves.
Spicy mushroom flavor in the white egg-shaped fruits of the White Egg variety and in the elongated spherical fruits of the Mushroom Taste variety. The weight of the fruits of these varieties is up to 100 grams. They mature in 110-115 days. The bushes of the White Egg variety are low - up to 0.8 m, and in the Taste of mushrooms variety - a little higher and more spreading.
Another variety of eggplant White Night is mid-ripening, the fruits ripen in 115 days. The plant is up to 75 cm high, the fruits are elongated pear-shaped, 17-25 cm long, 7-10 cm in diameter, weighing up to 280 grams. The pulp is snow-white without bitterness. This variety has complex resistance to disease.
But the Pelican variety amazes with its high yield and interesting fruit shape. The plant is up to 1 meter high, beautiful, fruits weighing 200-250 grams, 15-18 cm long and 4-6 cm in diameter, saber-shaped.
I will name two more new eggplant varieties with a rare fruit color and a good taste without bitterness: Early variety, ripens in 100-105 days, Matrosik variety is named so for its striped fruits. He has alternating lilac and white stripes. They are oval in shape, weighing 140-150 grams, very tasty. Semi-stemmed bushes with rather large leaves.
The Othello variety has a light pinkish-lilac fruit, barrel-shaped, weighing up to 300 grams. The skin and pulp are tender, the taste is excellent. He has semi-stem compact bushes with large leaves, the variety does not require shaping, the yield is 4.5 kg / m2.
Of the green-fruited eggplants, in my opinion, the Zelenky variety is interesting - early maturing, ripens in 110 days; its bush is up to 70 cm high, the fruits are green, elliptical, like large cream, the pulp is without bitterness, loose, white with a slight greenish tinge and with a characteristic "mushroom" taste. Fruit weight up to 300 grams.
The Emerald variety has a similar color - early, green with an emerald tint, fruits weighing 300-400 grams, they are beautiful, round-barrel-shaped.
Variety Chinese green ripens up to 100 days, its bush is up to 50 cm high, compact, does not require shaping, fruits weighing up to 400 grams. They are round-elongated, in technical ripeness they are green, in biological ripeness they are bronze-yellow, the flesh is white, tender, without bitterness.
Of course, ordinary eggplants (blue ones) are more productive, but it never hurts to have several different varieties in the garden.
All of the above varieties are well grown both in greenhouses and in the open field. We usually sow seeds for seedlings in early February, since eggplant seedlings, like pepper, requires a longer growing period.
When planting in a permanent place, it must be remembered that to set more fruits, a more spacious planting is required: in a row 50-60 cm, in aisles - 60-70 cm.Since eggplants are a self-fertile crop, then on one bed you can grow many at the same time varieties, and they will not be pollinated. If you want to collect your own seeds, you need to leave more full-fledged fruits, let them ripen well.
Then peel, cut into small pieces, put in a glass dish indicating the grade. Allow the pulp to soften to a "black mass" for 7-10 days, mash it by hand and rinse in water, gradually draining the unusable ingredients. In this case, good full-fledged seeds will immediately settle to the bottom, and all the remaining debris will merge with water. Then the seeds need to be dried on paper and poured into envelopes.

First you need to dry the eggplants in the fall.
They are dried like mushrooms, they can be dried in the oven, over low heat, or they can be strung on a string and hung to dry. Eggplant needs to be cut lengthwise into 6 - 8 parts, depending on the size, but I do not advise you to dry very large ones, it is better to medium in size.
Dry if in the air for 3 - 4 days.
In the oven, on the lowest heat, 5 - 6 hours.
And now the cooking process itself.
Pour eggplants with boiling water for 15 minutes, salt.
Heat oil in a frying pan, add chopped garlic, ground coriander and fry for a minute. We take out the eggplants from the water, and put in hot oil, there are onions, cut into half rings and bell pepper. Fry for a minute or two over high heat. Pour out the soy sauce and vinegar and turn it off. Add carrots to the cooled eggplants.

When growing eggplants, it is worth considering that the culture is thermophilic, it prefers well-lit areas, fertile soils and abundant watering. The culture does not tolerate rainy weather and cold, therefore it is important to know the timing of planting and the basic principles of caring for eggplants in this region. For eggplant in the Moscow region, it is necessary to form a stem. Two shoots are left, they are tied to trellises. They get rid of extra stepsons. When grown in southern regions where it is warm, eggplant cultivation consists of the following points:

"I don't grow eggplant anymore!"
That's what I said last fall. Everything. Basta. No eggplant! Why? Do not grow! Well, that is, they are growing, of course. But what good is that tops to me? And there is no use from flowers either - I do not grow eggplants for beauty. And with the harvest, something does not stick ... The first ovaries last year appeared at the very end of August. And in September it is already cold here, maybe snow will fall - what kind of eggplants are there ... Therefore - that's it, I don't sow anymore, I don't plant and don't even look towards the seeds.
Eggplant seeds that I (sort of) don't grow anymore
After the New Year, an inner voice begins to urge: “Maybe, after all. So what if it didn't work last year, and the year before last the seeds didn't sprout at all - it happens. " I adhere to the chosen course, I do not respond to prompts.
An inner voice goes on the attack: “Surrendered, right? Did you give up before failures? " I sluggishly kick back: “Yes, I have no seeds in store. And there is always not enough space for seedlings. " And it's true: there are no seeds, and there is not enough space. But who could have stopped it and when? Certainly not me.
Moreover, all sorts of super-hypermarkets there with my inner voice are clearly in cahoots: starting in February, at least do not go into stores at all. Showcases with planting material and all kinds of useful garden stuff, stands with seeds are met right at the entrance to any shop. No willpower is enough!
Honestly, I went for groceries! I turned to look at the seeds with just one eye - well, suddenly something very, very necessary, long sought everywhere, is waiting for me there ... Yeah, waiting, of course - eggplants in the most conspicuous place. Well, you can't do that!
The inner voice immediately activated: “Let's try again, give them a chance! You did it, remember? Well, what if it was a long time ago - it means that we must repeat! And in general, you also did not immediately learn to grow tomatoes, only you began to succeed on the first attempt. And eggplants are weak to win? In the end, what do you have to lose? "
In general, I gave up. The arguments run out. So I sowed eggplants today.
There are seeds. I had to sow.
What will come of this - we'll see. Indeed, well, I cannot cope with these stubborn people? Can't make them bear fruit? Can't figure out what the "ambush" is? I can! I can! I'll figure it out!
Now, I'm already trying to figure it out. For example, why 109-119 days from germination to harvest is a mid-ripening variety (see the description of the Almaz variety), and 110-116 is an early-ripening one (this is about Smuglyanka)? Although, perhaps, this is a rhetorical question: this kind of information on sachets is quite common, and I almost stopped using the words “early maturing”, “mid-maturing”, “late-maturing” in the descriptions of varieties - I prefer to look at the numbers.
On the other hand, even with arithmetic, something doesn't work for me ... 110-120 days is 3.5-4 months, right? Does this mean that the eggplants sown in February should be harvesting by the end of June? Well, let it be in July, okay. But why then don't they even bloom at this time ?! Well, let's figure it out - since we have sown everything, we need to achieve a harvest.
And along the way, conduct an experiment to find out if the price affects the quality of the seeds. I have read and heard a lot of good reviews about seeds for a ruble, which are sold in many chain hypermarkets in the spring. And since this is the case ... Check it out!

Sowed 6 seeds from each bag. Primer - “Fat Earth” universal from PeterPeat (last year I used it - I was satisfied with the quality). The best purple varieties
Even the fact that new bright colors of the vegetable with low bitterness appeared did not distract from the standard purple favorites. Among them, the leading varieties are:
King of the north
Resistant to frost, technical ripeness for 90 - 100 days, but can be removed for 70 - 80 days. Up to 4 kg of even purple, very beautiful fruits are removed from the bush.
Hybrid. It tolerates drought patiently, but it is necessary to use a lot of water one time. Bush up to 90 cm high. Beautiful elongated fruits weighing up to 250g. Maturation at 90 - 115 days. From one plant, you can get up to 8 kg of eggplant.
Dwarf variety. Height up to 50 cm, but the bush is very branched. It looks very decorative, in the form of a ball, does not require shaping. Ripeness for 80 days. Fruits up to 180 - 200g.
During the season, you can get up to 8 kg of beautiful bright purple fruits.
Open ground varieties
If you plan to grow your eggplant outdoors, suitable frost-resistant varieties are essential. In the middle lane, even the most patient vegetable to temperature changes requires shelter for the period of night frosts. Only zoned hybrids are ideal for a greenhouse.
Patient enough to temperature changes, you can plant seedlings at the end of May. Height up to 120 cm, has a strong and dense stem. Pinching is not required, the bush forms itself. Up to 8 kg of eggplants can be removed from one bush.
Does not tolerate spring frosts, therefore, plant in open ground after their end. Rounded fruits weighing up to 300 g., Bush up to 80 cm., Yield about 8 - 12 kg. Unpretentious in agricultural technology, but does not tolerate overflow.
One of the best outdoors. The height of the bush is up to 70 cm, very branchy, fruits up to 150g, but in one season it is possible to collect up to 9-10 kg. A garter is required, as the bush is very fragile.
Before planting, the seeds are prepared. Disinfection is carried out with 1% potassium permanganate for 20-30 minutes.
After that, they are kept for 2 hours in a solution of trace elements. This helps the sprouts to sprout faster. The procedure does not apply to purchased processed beans.
Seedlings of the culture are unstable to transplantation, therefore, they plant seeds immediately in spacious individual cells with drainage holes. They use glasses, plastic bottles, pots, cassettes.
Before sowing, they are filled with earth and watered. 1-2 seeds are lowered to a depth of 1 cm, covered with soil, watered a little. In the future, watered as the soil dries up at the root, but only with warm water of 25 ° C.
